Mango sambar is one of the flavorful sambar just like drumstick sambar. I am not a big fan though. But mom and MIL makes this very often in mango season.
To begin with this recipe, we have to prepare a few ingredients. You can cook mango sambar using 17 ingredients and 9 steps. Here is how you can achieve it.
The ingredients needed to make Mango sambar:
- Take 2 tbsp Oil
- Take 1 tsp Mustard seeds
- Prepare 1 tsp Fenugreek seeds
- Get 1 tsp Urad dal
- Take Curry leaves 1 sprig
- Take garlic cloves 5 nos
- Take 1 tsp Hing powder
- Take Red chilli 2 nos
- Prepare Green chilli 2 nos
- Prepare Onion 1 nos
- Get Tomato 1 nos
- Prepare Mango 1 nos
- Make ready 1 cups Toor dal
- Make ready Tamarind juice- small lemon size 1 nos
- Take 1 tsp Turmeric powder
- Make ready 1 tsp Chilli powder
- Make ready 1 tbsp Sambar powder
As mango season has started in India, I thought of sharing recipes using mangoes. The first one that came to my mind is this raw mango sambar recipe. Raw Mango Sambar Recipe - South Indian Mangai Sambar Recipe. A comforting tangy dal curry made with toor dal and cooked along with Raw mango which gives a good tanginess to the curry.
Instructions to make Mango sambar:
- Wash toor dal and cook well in a pressure cooker along with 2 garlic, turmeric powder, green chilli, Hing powder and salt for 2 whistles.
- Soak a lemon sized tamarind in a water for 15 mins and take the juice.
- In a pan add oil, when it is hot add red chilli, mustard seeds, fenugreek seeds, urad dal,remaining garlic,Hing powder and Curry leaves. When spluttering add onions and tomato, mix it well and cook till it becomes mushy.
- Now add turmeric powder, chilli powder and sambar powder. Mix well till the raw smell goes.
- Add the cubed mango pieces and mix well to the masala.
- Now mash the cooked dal and add to the onion tomato masala.
- Keep the flame in medium low and cover it for 5 mins, mix it in between to avoid burning.
- Now extract the juice from the tamarind that is soaked in water and add to the dal. Add more water to this if you according to your consistency and let it boil for 15 mins in medium low.
- Now switch off and have the tasty mango sambar with hot steamed rice.
Raw Mango sambar i have tasted in my friend's house few years back, but somehow i didn't liked it. But i don't say she didn't make it nice, because mango sambar one of her signature. There are numerous versions of sambar but this one is note worthy due to the magical sambar powder. How to Make Drumstick and Raw Mango Sambar. Add sambar powder and asafoetida on low flame stir for a minute till you get the fine aroma of the sambar powder.
