  7. Get 2 1/2 cup crayfish

Eru is a Cameroonian soup that is commonly prepared and consumed by the Bayangi people from the southwest parts of the country. The soup is prepared with the eponymous wild plant called eru, which is ground or pounded before being stewed with palm oil, spinach, waterleaf, and either beef, crayfish, or cow skin. Eru Soup, made with Spinach and Eru leaves, is a Cameroonian dish loaded with proteins. The aroma from Eru Soup is a mouth-watering delight.

Instructions to make Eru soup:
  1. Slice water leaf into tiny bits.
  2. Wash water leaves and keep aside.
  3. Boil meat with cube seasoning and pepper until tender.
  4. Add water leaves to the meat when the meat water is almost dry. Add dry fish.
  5. Cook for 5mins and keep the pot open so that leaves dont loose their greenish colour.
  6. Once water from.water leaves and meat mixture is almost dry add eru leaves.
  7. Cook for 5mins and stir well.
  8. Add crayfish
  9. Add palm oil and taste. Cook for 10 mins .
  10. Serve hot with tapioca.

This soup is best served with your favorite starchy sides! Eru is a wild plant that is harvested from the forest in Cameroon. In Nigeria, it is called Ukazi or Afang. Natives of Cross Rivers State use it to prepare the famous Afang soup. Afang soup has a striking similarity to Eru but it is more "soupy' and the Eru is ground or pounded prior to preparation.
