  1. Get 3/4 cauliflower head, medium florets
  2. Prepare 3/4 cup green peas
  3. Take 1/2 cup finely chopped carrots

  6. Make ready 1 large potato cut into cubes
  7. Prepare 1 large onion thinly sliced
  8. Make ready 1 large tomato roughly chopped
  9. Get 4 garlic cloves finely chopped
  10. Take 2 green chillies finely chopped
  11. Take 1/3 cup cashews
  12. Prepare 3-4 stalks coriander leaves chopped
  13. Prepare 1 tbsp cumin
  14. Make ready 1 cinnamon stick
  15. Prepare 1-2 bay leaves
  16. Make ready 1 tbsp turmeric powder
  17. Take 1 tbsp red chilli powder
  18. Prepare 1 tbsp garam masala
  19. Get 1 tbsp kosher salt
  20. Prepare 1 tbsp kasuri methi
  21. Prepare 2 tbsp ghee/ oil
Steps to make Mix Veg Kadhai:
  1. In a large wok take 2 tbsp of ghee, once hot add cumin, cinnamon and bay leaf. Wait for cumin to crackle.
  2. Now add garlic, green chillies and onions. Saute till the onions become golden.
  3. Add tomatoes and let it cook till mushy. Add all the spices and mix well. Cook till the ghee separates.
  4. Add cashews, cook for another minute.
  5. Add all the vegetables and mix well. Cover for 3-5 minutes. Check if vegetables are half way cooked.
  6. Remove the lid, add 1 tbsp of kasuri methi and mix well. Cook for another 5-7 minutes on medium flame. Turn off the flame after it's cooked well.
  7. Garnish with coriander leaves and serve hot with rotis.
