  1. If you can't be bothered I am sure a store bought spring roll dipping sauce should be fine too!
  2. Cook the rice vermicelli in some boiling water for 3-5mins. The spring rolls in the picture did not have them in it, but adding the rice vermicelli makes the rolls definitely a LOT filling!
  3. Before getting to assembling the spring rolls, make sure all of the filling is chopped and washed and prepped and ready to go. Also make the dipping sauce and set aside
  4. Fill a large bowl with hot water. Gently place a rice wrapper in the water and allow it to soften. This should only take a few seconds. Lay the wrapper flat on a plate or cutting board. Next across the center place the filling, leaving 2 inches uncovered on each side and gently but tightly roll the wrapper
  5. If they are super long, I slice them right in the middle and serve it with the dipping sauce
  6. Absolutely yum!
